Coconut Kumquat Cocktail

We made this kumquat cocktail with fruits that we were able to score at the local market. It’s a little labor intensive, but definitely worth the effort. This drink brings some exotic, caribbean flair to the spring with its nice citrus and coconut flavors. Once again, the original recipe is by Christopher Longoria, Bar Manager at 1760 in San Francisco.




Ingredients (serves one):

11 Kumquats
1 tbsp of superfine sugar
1 oz of freshly squeezed lemon juice
3/4 oz Cointreau or triple sec
1 oz Disaronno
1 1/2 oz of Añejo Tequila
4 tsp of non-dairy coconut sorbet or gelato (melted)

Cut ten kumquats in half and put into shaker.
1 tsp of superfine sugar
1 oz of freshly squeezed lemon juice
Then muddle vigorously.
Grate cinnamon over the mixture.
Add to shaker:
3/4 oz of Cointreau or triple sec
1oz Disaronno
1 1/2 oz anejo
4 tsp of melted coconut sorbet
Add ice.

Shake no longer than 8 seconds!
Strain through the Hawthorn strainer into a tall Collins glass.
Slice another kumquat, then add and stir the slices into the glass.  Voilà!
