Ahhh, it’s the weekend! Finally… Time for a nice cocktail. This beautiful Tequila Campari Grapefruit Cocktail will help you slide into a couple of beautiful spring days. We were able to find some more fresh, local grapefruit. You will hardly taste the tequila- the grapefruit and campari will take the lead in this pleasantly fresh and light cocktail.

This drink requires a little bit of work, but it’s certainly worth the effort. Once again, this recipe is courtesy of Christopher Longoria, Bar Manager at San Francisco’s fabulous 1760.

Tequila Campari Grapefruit Recipe:

Ingredients (1 cocktail):

1 grapefruit (use half for one cocktail)
1 tbsp of superfine sugar
1 oz of lemon juice
pinch of cayenne
1.5 oz of tequila blanco
3/4 oz of triple sec
1/4 oz of dry vermouth
8 dashes of peychauds bitters
3/4 oz of Campari
1 egg (use only egg white)

Preparation:

Cut grapefruit into four segments. Cut two of those wedges in half.
Take 3 of those pieces (reserving one) and put them into the shaker. Add 1 tbsp of superfine sugar, 1 oz of lemon juice, and a pinch of cayenne.
Muddle.

 

Add:
1.5 oz of tequila blanco
3/4 oz of triple sec
1/4 oz of dry vermouth
8 dashes of peychauds bitters
3/4 oz. of Campari
Then, in a separate pint glass, add one egg white. Then add the egg white to your shaker (making sure there’s no yolk or shell)
Now a hard dry shake (without ice)
Then add ice and shake hard again
Double strain into a tall Collins glass.

We served this drink in tumblers instead of a collins glass. Anyway, this beverage is not shy and has a high grapefruit note. The ideal, refreshing drink for spring evenings. Cheers!
